Refuge recipes: vegan chocolate mousse
Chocolate mousse, surely you can’t make that vegan? Well, we’ve only gone and written a vegan chocolate mousse recipe – you’re welcome.
Banana does a lot of the heavy lifting here, and let’s face it, none of us can hack another round of banana bread after the last 12 months. Besides, it’s sort of healthier than your standard chocolate mousse, so if you still needed an excuse to make some, it might as well be that.
Vegan chocolate mousse recipe
Serves 4
Ingredients
125g banana
120ml coconut milk
40g maple syrup
15g cocoa powder
15g vanilla bean paste
120g dark chocolate, broken into small pieces
Method
1. Melt the chocolate in a heatproof bowl that’s placed over a pan of gently simmering water.
2. Once melted, add cocoa powder, vanilla paste, maple syrup and coconut milk.
3. Mash the banana with a fork, until completely smooth.
4. Combine banana with the chocolate mixture and chill in the fridge for at least an hour, or until set.
