At the centre of this elevated experience is Refuge’s take on the beloved Caesar salad – but not as you know it. Swapping out the standard grilled chicken for crispy, golden buttermilk fried chicken, this dish brings warmth, crunch and a decadent edge to the classic. Dressed with briny anchovies, ribbons of aged parmesan and crunchy gem lettuce, it’s the kind of salad that feels like a serious treat while still delivering on bold, fresh flavour.
